Meats

Pepper Steak Marinade

Total cooking time: see below
3 LB. CHUCK OR ROUND ROAST (CUT 2 IN THICK)
1 CUP WINE OR CIDER VINEGAR
1/2 CUP OLIVE OR SALAD OIL
3 TBS. LEMON JUICE
1 CHOPPED ONION
2 TSP. OREGANO
1 CRUSHED BAY LEAF
1/4 CUP PEPPERCORNS, CRUSHED
  1. Pierce meat with fork and pat crushed pepper all over.
  2. Mix liquid and spices.
  3. Marinate meat for at least 6 hours or overnight.
  4. Broil in oven or on BBQ until medium rare, about 20 minutes per side.
  5. Slice on diagonal.
