Guacamole Mousse

1 PKG. UN FLAVORED GELATIN
1/2 CUP COLD WATER
2 CUP RIPE CHOPPED AVOCADO
1/4 CUP FINELY CHOPPED ONION
1.2 CUP MAYO
1/2 CUP WHIPPING CREAM
1 TSP. SALT
1/2 CUP FINELY CHOPPED GREEN PEPPER
1/2 CUP FINELY CHOPPED RED PEPPER
1 TBS. PARSLEY CHOPPED
TABASCO TO TASTE
  1. In small bowl, sprinkle gelatin over water and let soften for 5 minutes.
  2. Place bowl over hot water and stir until gelatin is dissolved; Combine avocado, onion, Mayo, whipping cream, salt and chicken stock in blender.
  3. Stir in gelatin and remaining ingredients.
